Blueberry oat bars

Ryan’s Blueberry Oatb ars are a great substitute for any store-bought breakfast bar/meal replacement or over-priced coffee shop brand.
The idea for this came from Starbucks blueberry oatbars.
Ingredients
- 2 cups whole wheat flour
- 2 1/2 cups rolled oats
- 2 cups frozen blueberries
- 2 cups fresh blueberries
- 1 juice from a lemon
- 1 tsp. cinnamon
- 1/2 tsp. sea salt
- 1 cup Earth Balance (or any NON-hydrogenated butter
- 3/4-1 cups firmly packed organic brown sugar
Directions
Preheat oven to 400 degrees F. Spray a 9X13 baking pan with organic, Extra Virgin Olive Oil non-stick spray.
Add both frozen blueberries and the fresh blueberries into a medium bowl, keeping the juice in the mixture. Add the mixture, along with the lemon juice, into a medium frying and place over medium heat until it boils. Reduce the heat to a low simmer for 5 minutes.
Melt the butter in a small sauce pan.
In a large bowl, combine the wheat flower, rolled oats, cinnamon, brown sugar and salt. Slowly pour small amounts of the butter into the mixture, mixing as you pour. We are aiming to make small little crumbs. When done mixing, press 3 sups of the crumb mixture into the prepared pan. Bake for 15 minutes then remove to set as it cools for 10 minutes. Spread the blueberry mixture on top followed by the remains of the crumb crust. Bake for an additional 20-30 minutes until it is bubbling and the top crust is a nice, golden brown. Allow to cool for up to 30 minutes.
